From Our Kingsbridge Kitchen To Yours This Easter Sunday

Jim Farren, Head Chef at our Kingsbridge Kitchen, kindly put together a simple healthy brunch recipe for you to try that would be perfect for a lazy Easter Sunday. Enjoy!

​Baked Eggs With Courgette, Spinach & Feta Cheese

Ingredients: 

Onion - 1 finely sliced 
Green pepper - 1 finely sliced 
Courgette - 1 cut into ribbons
Spinach - 1 small bag washed 
Eggs - 4
Feta cheese - 100g
Salt & pepper - to taste
Chilli flakes - good pinch
Rapeseed oil - 2 tsp

Method:

  • Pre-heat your oven to 180c.
  • Slice the onion & pepper and set aside. 
  • Use a veg peeler to peel the courgette lengthways into ribbons .
  • Add the oil to an oven proof frying pan and fry off the onion, pepper, and courgette for about 10mins until soft.
  • Stir in the spinach and wilt down , season with salt and pepper.
  • Make four indentations with the back of a spoon and crack an egg into each one.
  • Scatter over the chilli flakes and feta cheese.
  • Bake for 10 mins.
  • Serve with a toasted Belfast bap.
